O Carballiño is a municipality in the province of Ourense, 25 km from the capital, with a population of 14,089 inhabitants. It is one of the five municipalities in this province with more than 10,000 inhabitants, and as of 2020 the most populous after the capital (105,643 inhabitants).

Chestnut trees and oaks are common in the area, hence its name. The Martiñá, O Suido and O Testeiro mountain ranges surround this destination, with peaks that, in some cases, exceed 1,000 meters.

One of the most characteristic resources of this municipality is water.

The underground water from its springs has mineral and medicinal properties, turning this destination into a thermal paradise.

The water used by pulpeiras and pulpeiros to cook octopus.

And the water of the river that flows through these lands, the Arenteiro, creating a landscape and natural environment of great attractiveness; and giving life to the 16 parishes that make up the destination: Arcos, Banga, Cabanelas, O Carballiño, Lobanes, Longoseiro, Madarnás, Mesiego, Moldes, Partovia, Piteira, Puente-Veiga, Sagra, Seoane, Señorín and O Barón. Recreational areas, fountains, mills, fishing areas or washhouses are common in the vicinity of the channel of this river.

When talking or thinking about Carballiño, it is inevitable to think of the star product of this municipality, the octopus, and the figure of the pulpeir@.

The origin of this link is in the town of Santa María de Arcos, the birthplace of authentic pulpeiros and pulpeiras, artisans in the preparation of the typical dish of “pulpo á feira”.

A tradition that materializes in the most famous pilgrimage of this municipality, the Carballiño Octopus Festival, with more than 50 years of history, which may seem insignificant if we compare them to the more than three centuries since the introduction of this marine product in the interior of Galicia, but which turned out to be more than enough to achieve the qualification of Festival of International Tourist Interest.
